
Mississippi Catfish Stew Recipe
Ingredients:
- 2 pounds catfish fillets
- 3 small potatoes, diced
- 1 small onion, diced
- 4 slices bacon, chopped
- 1 (16-ounce) can tomato sauce
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
How to cook Mississippi Catfish Stew:
- In a large heavy skillet or Dutch oven over medium heat, cook bacon until crisp; remove with slotted spoon and drain on paper towels.
- Cook onion in hot bacon fat until just beginning to brown.
- Add tomato sauce, potatoes, and seasonings, simmer until potatoes are tender, about 20-25 minutes.
- Cut the catfish fillets into bite-size pieces.
- Add the catfish pieces to the stew, cover, and cook about 5 minutes more, until the fish is no longer translucent.
- Remove the catfish stew from heat, sprinkle with bacon pieces, and serve at once with cornbread.
