
Newburg Poached Shrimp Recipe
Serves/Makes: 4
Ingredients:
- 2 cups (500 mL) cooked or canned shrimps
- 3 tablespoons (45 mL) butter
- 1 teaspoon (5 mL) lemon juice
- 1 teaspoon (5 mL) flour
- 1/2 cup (125 mL) cream
- 2 eggs yolks, slightly beaten
- 2 tablespoons (30 mL) sherry
- Salt and pepper to taste
How to cook:
- Melt 1 tablespoon (15 mL) butter cook shrimps for 3 minutes.
- Pour in lemon juice and cook for 1 minute set aside.
- Melt remaining 2 tablespoons (30 mL) butter stir in flour.
- Slowly pour in cream stir in beaten egg yolks.
- Cook until thickened.
- Stir in shrimps and sherry.
- Season to taste.
- Reheat.
Note:
Serve the Newburg Poached Shrimp with steamed rice.
