
Oklahoma Peanut Tuna Salad Recipe
Ingredients:
- 1 large can chunk style tuna
- 3 cups cooked rice
- 2 hard boiled eggs, chopped
- 1/4 cup lemon juice and rind of one lemon, grated
- 1 pound fresh tomatoes, chopped
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup French dressing
- 1/2 cup chopped peanuts
How to cook Oklahoma Peanut Tuna Salad:
- In a large bowl, place rice, tuna, chopped eggs, tomatoes, lemon juice and rind, salt, and pepper.
- Pour on French dressing, toss thoroughly but gently.
- Add chopped peanuts just before serving.
