
Oxford Crab Cakes Recipe
Ingredients:
- 1 pound backfin crab meat
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- 8 tablespoons butter, 1 stick
- 1 tablespoon fresh lemon juice
- 1 egg, slightly beaten
- 1 tablespoon Worcestershire sauce
- 1 hard-cooked egg, finely chopped
- 1 cup soft, white bread crumbs, 2 slices
- 1/4 cup corn oil for frying
How to cook Oxford Crab Cakes:
- Put crabmeat in a medium-size bowl and season with salt and pepper.
- Melt butter in a small saucepan and stir in lemon juice, eggs, and Worcestershire sauce. Pour over crabmeat. Add chopped egg and bread crumbs, and mix lightly but well.
- Form crabmeat into 8 patties approximately 1/2-inch thick.
- In a large skillet heat oil until just sizzling. Fry crab cakes, turning once, about 5 minutes on each side until golden brown and crispy. Remove crab cakes from skillet and drain on paper towels.
- Serve the Oxford Crab Cakes immediately.
