
Pacific Red Snapper in Herb Yogurt Sauce Recipe
Serves/Makes: 4
Ingredients:
- 4 (6 ounce) Pacific red snapper fillets
- 1/2 cup low fat yogurt
- 1 tablespoon margarine, softened
- 2 teaspoons all-purpose flour
- 1 tablespoon chopped onion
- 1 teaspoon grated lemon rind
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill, thyme or tarragon
- Salt and pepper to taste
How to cook:
- In non-stick skillet, melt margarine over medium heat cook the Pacific red snapper fillets for 3 minutes on each side or until nearly opaque. Transfer to hot serving plate. (The fish will continue cooking as it stands.)
- Add shallots and lemon rind to skillet cook for 1 minute or until shallots are tender. Mix yogurt with flour stir into pan. Add parsley or chives then dill, thyme or tarragon bring to a simmer. Season with salt and pepper to taste.
- Return the Pacific red snapper fillets to pan to briefly reheat and coat with sauce.
