
Pan Fried Salmon with Sorrel and Apple Recipe
Ingredients:
- 4 salmon fillets (about 6 ounces each), boneless and skinless
- Salt and freshly ground black pepper to taste
- Juice of 1 whole lemon
- 1 tablespoon vegetable oil
- 4 tablespoons butter
- 2 Granny Smith apples, diced
- 1 bunch green onions, chopped
- 1 small bunch sorrel, shredded (about 8 leaves)
- 1 teaspoon chopped parsley
- 1 lemon, sliced or quartered, for garnish
How to cook Pan Fried Salmon with Sorrel and Apple:
- Dry salmon on paper towels and season with salt, pepper and lemon juice.
- Add oil and 2 tablespoons butter to a large skillet and heat over medium/high heat. Place salmon fillets (presentation side down) in hot skillet. Fry until golden brown, turning at least twice.
- In a separate saucepan, heat remaining 2 tablespoons butter until hot. Add diced apples and green onions and cook over medium heat about 2 minutes.
- Divide among 4 dinner plates. Place fried salmon fillets on top. Sprinkle sorrel and parsley over salmon.
- Garnish with lemon slices or wedges.
