
Pasta and Seafood Primavera Recipe
Serves/Makes: 4 to 6
Ingredients:
- 1 pound (454 g) raw shellfish (shelled shrimps, scallops and crab meat)
- 1/2 cup (125 mL) white wine
- 3 small carrots, sliced
- 12 ounces (340 g) linguine pasta
- 2 tablespoons (30 mL) butter
- 1 clove garlic, finely minced
- 1 1/2 cups (375 mL) small fresh mushrooms
- 1 cup (250 mL) heavy cream
- 1/2 cup (125 mL) grated Parmesan cheese
- 1 1/2 tablespoons (22.5 mL) soft butter
- 1 1/2 tablespoons (22.5 mL) flour
- Salt and pepper to taste
How to cook Pasta and Seafood Primavera:
- Bring white wine to a boil.
- Add seafood, except crab meat.
- Cover and bring back to a boil.
- Take away from heat leave to rest, covered.
- Boil carrot slices in salted boiling water for 5 minutes drain and rinse under cold running water.
- Cook linguine pasta according to package directions.
- Meanwhile, in a large fry pan, melt 2 tablespoons (30 mL) butter.
- Lightly brown garlic and mushrooms.
- Add carrot slices, cream, grated Parmesan cheese, seafood with juice and crab meat.
- Bring to a boil.
- Well mix together soft butter and flour.
- Add butter/flour mixture to seafood mixture, stirring until thickened.
- Check for seasonings.
- Serve the Seafood Primavera over hot pasta.
Note:
For a more colourful dish, add some broccoli floweriest along with the carrots.
