
Penne with Shrimp and Tomatoes Recipe
Ingredients:
- 1 pound medium-size shrimp (about 18), shelled and deveined
- 1 tablespoon extra-virgin olive oil
- 2 to 3 cloves garlic, finely chopped
- 1/8 teaspoon crushed red pepper flakes
- 2 cups chopped, peeled and seeded tomatoes (about 1 3/4 pounds)
- 2 tablespoons finely chopped flat-leaf Italian parsley
- 1 teaspoon leaf basil, crumbled
- 1 teaspoon leaf mint, crumbled
- 1/4 cup bottled clam juice
- 1 tablespoon brandy
- 1 box (16 ounces) penne
- Finely chopped flat-leaf Italian parsley and grated lemon rind (optional)
How to cook Penne with Shrimp and Tomatoes:
- Heat the oil in a large, nonstick saucepan. Add the garlic and the red pepper flakes and sauté until the garlic just begins to color, for 2 to 3 minutes.
- Stir in the tomatoes, parsley, basil and mint. Bring to boiling, lower the heat, cover and simmer 10 minutes. Add the clam juice and shrimp. Cover, cook over low heat for about 5 minutes, or until the shrimp are pink.
- Meanwhile, cook the penne following the package directions. Drain the penne in a colander. Transfer them to a warm serving bowl and top with the hot sauce. Stir to mix well.
- Garnish the Penne with Shrimp and Tomatoes with the chopped parsley and grated lemon rind, if you wish.
