
Pinoy Pinakbet with Shrimp Recipe
Serves/Makes: 4 – 6
Ingredients:
- 1/3 cup salted small shrimps (bagoong alamang)
- 3 tablespoons cooking oil
- 3 cloves garlic, crushed skin detached
- 2 medium size onions, chopped
- 3 ripe tomatoes, chopped1/4 squash, cut into desired shapes
- 1 medium size ampalaya (bitter melon), clean and cut diagonally (To avoid bitterness of ampalaya, after slicing sprinkle it with rock salt, mix then wash under running water.)
- 5 medium size eggplant, cut diagonally
- 6 sitaw (string beans), tops and tails removed, cut
- 10 okra, tops and tails removed and cut into half
- 1/2 cup hot water
- Patis (fish sauce) to taste
How to cook Pinoy Pinakbet with Shrimp:
- Saute garlic, onions and tomatoes (do not overcooked). Add hot water together with ampalaya, okra and sitaw simmer for 10 minutes.
- Separately boil squash and eggplant for 5 minutes. When 10 minutes is over add half-cooked squash and eggplant together with salted shrimps (bagoong alamang).
- Simmer for another 5 minutes uncovered. Add fish sauce to taste.
