
Pinoy Ukoy (Shrimp Fritters) Recipe
Ingredients:
- 1/2 pound shrimp, sliced (12 shrimp)
- 1 cup cornstarch
- 1 cup flour
- 1 teaspoon salt
- 3/4 cup water
- 1 teaspoon annatto seeds, for color only
- 1 pound sweet potato, grated
- 3 tablespoons oil for frying
- 3 green onions, chopped
- Filipino Garlic Sauce for dipping (see the recipe below)
How to cook Pinoy Ukoy (Shrimp Fritters):
- In a bowl, combine cornstarch, flour, and salt. Soak annatto seeds in hot water for 20 minutes. Squeeze seeds to exude color, then strain and reserve liquid. Add 3/4 cup water and annatto water to starch mixture. Knead until the liquid is absorbed. Add the grated sweet potato and beat vigorously with a spoon until well combined. Heat oil in a skillet.
- Spoon 2 tablespoons of batter into skillet and top with green onions and 1 shrimp. Brown on both sides.
- Serve the Pinoy Ukoy with Filipino Garlic Sauce or crush 1 tablespoon garlic with 1 teaspoon salt. Mix thoroughly with 1/2 cup white vinegar.
Filipino Garlic Sauce Recipe
Filipino Garlic Sauce Ingredients:
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1 1/2 cups chicken stock
- 2 tablespoons cornstarch
- 2 garlic cloves, minced
- 4 tablespoons water
How to cook Filipino Garlic Sauce:
- Combine the sugar, soy sauce and stock. Cook for 2 minutes.
- Dissolve the cornstarch in the water, and add to the pan.
- Cook, stirring constantly, over high heat, until the sauce thickens.
- Serve the sauce hot, sprinkled with minced garlic. Serve with Lumpia or Ukoy.
