
Poached Bay Bug Tails with Fresh Salsa Recipe

Ingredients:
- 4 large Moreton Bay bug tails
- 1 diced cucumber
- 2 diced tomatoes
- 1 diced red onion
- 2 tablespoons chopped dill
- Juice of one lime
- Lettuce, shredded
- Salt and pepper to taste
How to cook Poached Bay Bug Tails with Fresh Salsa:
- Poach the Moreton Bay bug tails in salted water for 5-7 minutes. Remove the Bay bug tails from the pot and place in the refrigerator to chill.
- Mix all the salsa ingredients. Split the tails lengthwise, place the Bay bug tails on a bed of shredded lettuce and pour the salsa over Bay bug meat.
