
Polish Fish Broth Recipe
Ingredients:
- 2 pounds fish fillets
- 2 tablespoons butter or margarine
- 3 quarts water
- 1 large onion, quartered
- 1/2 small head savoy cabbage
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 parsley root, chopped
- 6 peppercorns
- 1 bay leaf
- 1 teaspoon lemon juice
- 1/2 teaspoon nutmeg
- Salt
How to cook Polish Fish Broth:
- Brown onion in butter in small skillet.
- Meanwhile, simmer the vegetables in water with peppercorns, bay leaf, and salt to taste for 15 minutes.
- Add onion and fish to vegetables; simmer about 10 minutes, or until fish flakes easily.
- Remove fish and vegetables. Use for another dish, if desired. Strain broth. Add lemon juice, 1 teaspoon salt and nutmeg.
- Boil broth rapidly 10 minutes. Strain again, if desired.
- Serve as a clear soup.
