
Polynesian Baked Fish with Banana Recipe
Ingredients:
- 2 fish fillets (about 8 ounces each)
- 2 large cooking bananas
- 1 small onion, chopped
- 1 tomato, chopped
- 1 cup coconut cream
- Chillies or shake of pepper (optional)
- Salt to taste
- Softened banana leaf
How to cook Polynesian Baked Fish with Banana:
- Peel and slice cooking bananas lengthwise and place on softened banana leaf.
- Add fish and rest of ingredients.
- Wrap everything together in and bake in an earth oven for an hour.
Tips:
Half-ripe cooking bananas give a better flavor.
You can usually find fresh banana leaves sold in packages (they contain several leaves). Store whatever is leftover in the freezer and they should last a long time. If you cannot find fresh, you can certainly purchase frozen ones from the freezer section.
However, if you cannot find banana leaves at all, you can use aluminium foil but you won’t get the flavor from the banana leaf.
