
Polynesian Shellfish Salad Recipe
Ingredients:
- 2 cups cooked shellfish (your choice clams, mussels, scallops or a combination of them) meat
- 3 cups cooked chopped potatoes
- 1/2 cup chopped parsley
- 3 tomatoes, chopped
- 1 onion, chopped
- 4-6 lettuce leaves
- 2 lemons
- 2 cloves garlic
- 1 teaspoon pepper
- Salt to taste
- 2/3 cup oil
- 1/3 cup vinegar
How to cook Polynesian Shellfish Salad:
- Prepare dressing in a bowl by mixing crushed garlic, pepper, salt, oil and vinegar with a fork until well blended.
- Line a bowl with the lettuce leaves.
- Mix cooked shellfish with potatoes and the remaining ingredients and place in bowl. Add prepared dressing.
- Serve topped with slices of lemon.
