
Portuguese Fish Pudding with 3 Sauces Recipe
Ingredients:
- 3/4 pound (350 g) cocked fish, flaked
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 1/4 pint (150 ml) white wine
- 5 ounces (150 g) bread
- 2 cups milk and water, mixed 50/50
- 2 eggs, separated
- A little butter
- Salt and pepper
- 1/2 cup white sauce
- 1/2 cup tomato sauce
- 1/2 cup mayonnaise
How to cook Portuguese Fish Pudding with 3 Sauces:
- Heat the oil with the onion, and cook until golden.
- Add the fish, salt, pepper and wine and cook for 10 minutes over a gentle heat, stirring all the time.
- Meanwhile, soak the bread in the milk and water, add the egg yolks and mix well.
- Add the fish mixture and beat all together for 10 minutes (or use blender} before folding in the egg whites, which have been beaten stiff.
- Pour the mixture into a buttered oven mould and cook it in a moderate oven for 1 hour.
- Turn the pudding out on to a sewing dish and pour over it some white sauce, some tomato sauce and some mayonnaise, so that the three sauces partly run into each other.
- Serve the fish pudding with broccoli or cauliflower.
