
Romblon Shrimp with Mixed Vegetables Recipe
Ingredients:
- 2 cups shrimp, shelled and deveined
- 3 medium sponge gourd (patola), sliced
- 2 large tomatoes, sliced
- 5 pieces okra
- 1/4 medium upo (Filipino squash), cut in cubes
- Any leafy vegetables (e.g. saluyot, squash tops, etc.)
- Shrimp paste (bagoong), to taste
How to cook Romblon Shrimp with Mixed Vegetables:
- Saute upo for 3 minutes, then add the okra.
- Add water to cover and bring to a boil until upo is medium tender.
- Add the tomatoes and patola.
- Boil for few minutes, then add shrimp and shrimp paste.
- When shrimp are done, add the leafy vegetables and cook until done.
