
Russian Baked Whole Sterlet Recipe
Serves/Makes: 4 – 6
Ingredients:
- 1 whole sterlet (about 3 pounds), cleaned and scaled
- 1 lemon
- Dill
- White wine
- Salt and pepper to taste
How to cook Russian Baked Whole Sterlet:
- Wash sterlet in cold water.
- Combine peeled and thinly cubed lemon with dill, salt and pepper and stuff fish with the mixture.
- Sprinkle with white wine and bake in the preheated oven 350°F (180°C) for 25 minutes.
- When the fish is cooked, remove the spine carefully.
- Serve the baked sterlet with rice or boiled potatoes.
