
Russian Caviar Pie Recipe
Ingredients:
- 1 (3 to 4 ounces) jar black or red caviar (or both)
- 2 teaspoons Knox unflavored gelatin
- 1/4 cup cold water
- 2 cups sour cream
- 2 cups small curd cottage cheese
- 1/4 cup blue cheese, crumbled
- 1 package dry Italian salad dressing mix
- 1 bunch green onions, chopped
- 1 hard-boiled egg, chopped
- 1 cherry tomato, for garnish
How to cook Russian Caviar Pie:
- In medium saucepan, dissolve gelatin in cold water. Then heat until clear.
- Add sour cream, cottage cheese, blue cheese and salad dressing mix. Mix well.
- Pour into greased quiche dish and refrigerate overnight.
- Prior to serving, flip molded pie onto serving platter.
- Top with green onions, boiled egg, and caviar. Garnish with cherry tomato rose in center of pie, if desired.
- Serve the Caviar Pie as a spread with party-size dark pumpernickel bread or crackers.
