
Salmon in Cream-Dill Sauce Recipe
Serves/Makes: 2
Ingredients:
- 2 salmon (char, trout) fillets, about 6 ounces each
- 1 medium onion, finely chopped
- 1 bunch dill, finely chopped
- 7 ounces (200 ml) cream
- 7 ounces (200 ml) broth (vegetable or chicken)
- Salt and pepper
- 1 bay leaf
- Butter or vegetable oil
How to cook Salmon in Cream-Dill Sauce:
- Season the salmon fillets with salt and pepper and leave to rest.
- Saute the onion in vegetable oil or butter until golden brown.
- Pour in the cream and the broth.
- Bring to a boil. Reduce temperature and poach 5-7 minutes.
- Put the salmon fillets in the sauce, add dill and bay leaf.
- Simmer at a very low heat for 5 minutes.
- Try the sauce – if you need add more salt and pepper to taste.
- Serve the Salmon in Cream-Dill Sauce with mashed potatoes.
