
Salmon Potato Strata Recipe
Ingredients:
- 1/2 pound (227 g) freshly boiled salmon or 7 1/2 ounces (213 mL) canned salmon, drained
- 1 cup (250 mL) minced celery
- 1 onion, minced
- 1 garlic clove, minced
- 2 teaspoons (10 mL) lemon juice
- 4 eggs
- 1 1/2 cups (375 mL) milk
- 1 teaspoon (5 mL) paprika
- 1/2 teaspoon (2.5 mL) thyme
- 1/2 teaspoon (2.5 mL) celery salt
- Pepper, to taste
- 1 tablespoon (15 mL) butter (to grease)
- 3 cups (750 mL) peeled and really thinly sliced potatoes
- 2 tablespoons (30 mL) grated Parmesan cheese
- 1/2 cup (125 mL) breadcrumbs
- 2 tablespoons (30 mL) freshly chopped parsley
How to cook Salmon Potato Strata:
- Preheat oven to 350°F (180°C).
- Mix together salmon, minced celery, onion and garlic and lemon juice reserve.
- Whip together eggs and milk.
- Mix in paprika, thyme, celery salt and pepper.
- Well mix into reserved salmon mixture.
- Butter a 6-cup (1.5-L) oven-safe dish.
- Arrange half of potato slices into prepared dish evenly pour in salmon mixture.
- Cover with remaining potato slices.
- Mix together grated Parmesan cheese, breadcrumbs and chopped parsley sprinkle all over potato slices.
- Bake into preheated oven for approximately 1 hour, until potatoes are tender.
