
Salmon Tartare on Cucumber Slices Recipe
Ingredients:
- 3/4 cup (lightly packed) 1/4-inch cubes fresh skinless salmon fillet (about 6 ounces)
- 4 teaspoons mayonnaise
- 1 tablespoon chopped fresh dill plus sprigs for garnish
- 1 tablespoon drained prepared white horseradish
- 2 teaspoons fresh lime juice
- 1 teaspoon grated lime peel
- 1/2 large avocado, peeled, pitted, cut into 1/4-inch cubes
- 16 to 18 thin diagonal slices unpeeled English hothouse cucumber
How to cook Salmon Tartare on Cucumber Slices:
- Mix salmon, mayonnaise, chopped dill, horseradish, lime juice, and lime peel in medium bowl.
- Fold in avocado. Season with salt and pepper.
- Cover; chill, at least 30 minutes and up to 1 hour.
- Spoon salmon mixture onto each cucumber slice.
- Garnish with dill sprigs.
