
Salted Cod Fritters Recipe
Serves/Makes: 6 – 8
Ingredients:
- 5 pieces salted cod
- 6 potatoes
- 1 large onion
- 2 bay leaves
- 1 sprig fresh rosemary
- Water
- 2 eggs
- Small bouquet of parsley, finely chopped
- 1 tablespoon (9 g) flour
- Salt and pepper, to taste
- Oil
How to cook:
- Soak cod in water overnight, to remove the salt drain.
- Into a casserole, add cod, potatoes, onion, bay leaves and rosemary cover with water.
- Bring to a boil simmer until done.
- Drain bone cod and crush potatoes.
- Mix together cod, potatoes, eggs, parsley, flour, salt and pepper.
- In a fryer, preheat oil.
- Using 2 spoons, shape mixture into small balls fry fish balls into really hot oil.
- Fry balls for 10 minutes.

A Portuguese dish that can either be served hot or cold.
