
Seafood Potstickers with Peanut Sauce Recipe
Serves/Makes: 26 potstickers
Ingredients:
- 26 small egg roll or dumpling wrappers (3-inch squares)
- 3/4 cup seafood or chicken stock
- 8 ounces shrimp, peeled, deveined, and diced OR crab meat (or imitation crab meat ‘surimi’), flaked
- 1 clove garlic, minced
- 1 green onion, chopped
- 2 tablespoons chopped fresh coriander
- 2 tablespoons natural peanut butter
- 2 tablespoons water
- 2 tablespoons chopped fresh coriander
- 1 tablespoon honey
- 1 tablespoon rice wine vinegar
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced fresh ginger
How to cook Seafood Potstickers with Peanut Sauce:
- TO MAKE PEANUT SAUCE – In a food processor, or in a bowl using a whisk, combine peanut butter, water, coriander, honey, vinegar, soy sauce, sesame oil, garlic and ginger. Set aside 2 tablespoons.
- TO MAKE FILLING – In a clean food processor, combine shrimp, garlic, green onion, coriander, and 2 tablespoons of the reserved peanut sauce; pulse on and off until well mixed and shrimp is finely chopped.
- Place 2 teaspoons filling in center of each wrapper. Pull edges up, pleating and bunching. Press edges together to seal.
- In a large nonstick frying pan sprayed with cooking spray, cook the potstickers, flat-side down, over medium-high heat for 3 minutes, or until golden brown on bottom.
- Add stock; reduce heat to low. Cover and cook for 2 minutes or until cooked through. Remove from pan; discard any remaining stock.
- Serve the Seafood Potstickers with the remaining peanut sauce.
