
Seafood Tortilla Pinwheels Recipe
Serves/Makes: 6
Ingredients:
- 4 ounces cooked shrimp OR crab meat (or imitation crab meat ‘surimi’), chopped
- 3 ounces cream cheese (recommended: Philadelphia), softened
- 1/2 cup ricotta cheese
- 2 tablespoons fresh dill, or 1 teaspoon dried
- 2 tablespoons chopped green onions
- 1 tablespoon mayonnaise
- 2 teaspoons lemon juice
- 1/4 cup sweet red peppers, chopped
- Old Bay Seafood Seasoning, or other of your choice
- 4 small tortillas, or 2 large
- Lettuce leaves, optional
How to cook Seafood Tortilla Pinwheels:
- Place cream cheese, ricotta, dill, Seafood Seasoning, green onions, mayonnaise and lemon juice in a bowl; combine thoroughly.
- Stir in shrimp or crab meat and red peppers.
- Divide seafood mixture among tortillas and spread to the edges; top with lettuce leaves, if using, overlapped to cover entire tortilla.
- Roll up tightly; cover and refrigerate for 1 hour to chill.
- Cut each roll crosswise into serving pieces and serve.
