
Seaside Seafood Casserole Recipe
Ingredients:
- 3 pounds cooked, deveined shrimp
- 1 cup crab meat
- 1 green pepper, chopped
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 1/4 cup finely diced sweet red peppers
- 4 hard-cooked eggs, sliced
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups light cream
- 1 cup Cheddar cheese
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup buttered cracker crumbs
How to cook Seaside Seafood Casserole:
- Combine green pepper, red pepper, celery, onions and saute in a small amount of butter or cooking oil; until vegetables are tender. Add shrimp, crab and eggs.
- Melt butter; stir in flour until smooth. Gradually add cream; cook until mixture thickens, stirring constantly. Add cheese, salt and pepper. Add sauce to shrimp mixture; then turn into a 3-quart casserole.
- Sprinkle crumbs over top. Bake at 400°F (200°C) for 15 minutes now, or make a few hours ahead, and heat in a 350°F (180°C) oven until bubbly when needed.
