
Shanghai Lilly Coconut Shrimp Recipe
Ingredients:
- 12 shrimp, 16 to 20 count
- 2 cups peanut oil
- 2 large eggs, beaten
- 3 tablespoons coconut milk
- 1 cup Japanese panko bread crumbs
- 1 cup unsweetened coconut flakes
- 4 tablespoons finely chopped parsley
- Salt and freshly ground black pepper, to taste
- 1/2 cup all-purpose flour, seasoned with salt and pepper
- Chinese Duck Sauce, optional
- Chinese Hot Mustard, optional
How to cook Shanghai Lilly Coconut Shrimp:
- Heat peanut oil to 375°F (190°C).
- Meanwhile, peel and devein shrimp, but leave tails on. Split each one down the back and open like a butterfly.
- Combine eggs and coconut milk in small bowl and whisk lightly. Combine bread crumbs, coconut flakes and parsley in a separate bowl.
- Season shrimp with salt and pepper, then dredge each in flour, shaking off excess. Dip each shrimp into egg mixture, then coat in breading mixture and gently press so that it adheres well.
- Deep-fry in hot peanut oil until golden brown, about 1 1/2 to 2 minutes.
- Serve the Coconut Shrimp with Chinese Duck Sauce and Chinese Hot Mustard.
Chinese Duck Sauce Recipe
Chinese Duck Sauce Ingredients:
- 3/4 cup peach jam or apricot jam
- 2 tablespoons plum jam
- 3 garlic cloves
- 1 dried red chili pepper
- 5 tablespoons rice vinegar
- 1 teaspoon gingerroot, peeled and minced
- 1/2 teaspoon soy sauce
- 1 teaspoon chili powder
How to cook Chinese Duck Sauce:
- Put all ingredients in a blender and process until smooth.
- Refrigerate a few hours before using.
Chinese Hot Mustard Recipe
Chinese Hot Mustard Ingredients:
- 1/4 cup boiling water
- 1/4 cup dry mustard
- 1/2 teaspoon salt
- 1 tablespoon salad oil
How to cook Chinese Hot Mustard:
- Stir boiling water into dry mustard.
- Add salt and salad oil.
- For a more yellow color, add a little turmeric.
