
Shrimp and Asiago Pasta Recipe
Ingredients:
- 1 pound medium shrimp, peeled and deveined
- 1 pound linguine or fettuccine pasta
- 1 tablespoon olive oil
- 1/4 pound sliced pancetta, chopped
- 12 ounces sliced mushrooms
- 1 teaspoon minced garlic
- 1 (16-ounce) jar Alfredo Sauce*
- 1/2 cup Marsala wine or dry sherry
- 1 cup shredded Asiago cheese**
- Chopped green onion and diced tomato, for garnish
- Additional shredded Asiago, for garnish
How to cook Shrimp and Asiago Pasta:
- Bring a large pot of salted water to a boil over high heat and add the linguine or fettuccine pasta. Cook according to package directions, drain, and place in a large bowl and set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the pancetta and fresh mushrooms and sauté until the mushrooms are golden, about 5 minutes. Add the garlic and sauté 1 minute more. Add the Alfredo Sauce and Marsala, bring to a boil, reduce heat and simmer 5 minutes.
- Stir in the cheese and shrimp and simmer until the shrimp are done, about 3 to 5 minutes. Pour the sauce over the pasta and toss to coat well.
- Serve the Shrimp and Asiago Pasta in individual pasta bowls and garnish with the chopped green onion, diced tomato, and shredded Asiago.
