
Shrimp and Green Beans in Coconut Milk Recipe
Ingredients:
- 2 pounds shrimp, left in shell but cut down back and deveined
- 16-ounce can lite coconut milk
- 2 garlic cloves, crushed
- 8 cups green beans
- 1/2 teaspoon salt
How to cook Shrimp and Green Beans in Coconut Milk:
- Bring coconut milk and garlic to a simmer in a wok or a heavy skillet over medium heat.
- Stir until the mixture thickens to consistency of whipping cream, about 7 minutes.
- Add green beans, cover and simmer for 6 minutes, stirring occasionally.
- Add shrimp and salt to green bean mixture.
- Cover and simmer until shrimp turn just opaque, about 15 minutes.
