
Shrimp Mousse on Sugar Cane (Chao Tom) Recipe
Serves/Makes: 8 each
Ingredients:
- 10 ounces (1 1/4 cups) shrimp, minced
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 pinch of pepper
- 2 tablespoons vegetable oil
- 8 sugar cane pieces, 4 inches long
- 1 red chili, seeded and sliced
- 1 cup Sweet And Sour Sauce (see the recipe below), to serve
- 1/2 cup cilantro leaves, to serve
How to cook Shrimp Mousse on Sugar Cane (Chao Tom):
- Grind or pound shrimp with salt, sugar and pepper.
- Using the oil, form the shrimp paste around the sugar cane until tight.
- Grill over medium charcoal heat until crisp and slightly browned.
- Serve with chili, sweet and sour sauce and cilantro leaves.
Vietnamese Sweet And Sour Sauce (Sot Chua Ngot) Recipe
Vietnamese Sweet And Sour Sauce (Sot Chua Ngot) Ingredients:
- 3 cloves garlic, finely chopped
- 1 tablespoon oil
- 2 tablespoons sliced shallots
- 2 pickled shallots, sliced
- 1 small carrot, diced
- 1 small green bell pepper (capsicum), diced
- 1 medium red chili, diced
- 1 tablespoon sugar
- Salt and pepper to taste
- 1 teaspoon tomato sauce
- 2 tablespoons vinegar
- 1 tablespoon corn flour mixed with 1 teaspoon water
How to cook Vietnamese Sweet And Sour Sauce (Sot Chua Ngot):
- Saute garlic in oil until slightly colored.
- Add sliced shallots, pickled shallots, carrot, green bell pepper, chili, sugar, and salt and pepper to taste.
- Keep frying, add tomato sauce and vinegar.
- Bring combination to boil, add cornstarch mixture.
- Reduce heat, stir and simmer for 1 minute.

Comments:
Although the pounding is normally done in a mortar, you can use a blender or a food processor. Crab is a good substitute for shrimp. If grilling is not possible, oven bake at 375°F (180°C) for about 20 minutes.
