
Shrimp Pate Recipe
Ingredients:
- 12 large shrimp
- 1 tablespoon olive oil
- 1 shallot, minced
- 1 teaspoon balsamic vinegar
- 1/4 cup dry white wine
- 1 pound softened cream cheese
- 2 tablespoons Firecracker Sauce (see the recipe below)
How to cook Shrimp Pate:
- In a saucepan heat the olive oil over medium heat and soften the shallot. When translucent and tender (a few minutes), add the balsamic vinegar and white wine.
- Add the shrimp and Firecracker Sauce, and cook on high heat until the shrimp are cooked thoroughly, about 5 minutes.
- Strain all the ingredients and let the shrimp stand for about 5 minutes.
- With the steel blade in your food processor, mix the strained shrimp and blend with the cream cheese. The best way to do this is break off the cream cheese in pieces and add them gradually while the processor is running.
- When all is blended, the mixture can be placed in a mold for later or scooped out with an ice cream scoop after it is chilled.
Firecracker Sauce Recipe
Firecracker Sauce Ingredients:
- 1 red sweet pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 4 small jalapenos, cut in rings or seeded and minced
- 2 firecracker peppers (difficult to find: substitute 4 Tabasco peppers), diced
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh thyme leaves
- 2 cups tomato sauce or pureed tomatoes
- 1 cup Bloody Mary mix (Zing Zang)
- 1/4 cup hot sauce
- 1 tablespoon sugar
- 2 teaspoons salt
How to cook Firecracker Sauce:
- In a medium pot saute all of the peppers and the onion in the olive oil over high heat, and add the thyme and oregano.
- Continue to cook on high heat, stirring until the ingredients brown somewhat, about 5 minutes.
- Add the tomatoes, Bloody Mary mix, hot sauce, sugar, and salt.
- Simmer on low heat for about 20 minutes.
