
Shrimp Sauce Piquante (Shrimp Creole) Recipe
Ingredients:
- 2 pounds peeled and deveined shrimp
- 4 onions, finely chopped
- 3 bell peppers, finely chopped
- 1 1/2 cups chopped green onion tops
- 1 1/2 cups chopped parsley
- 1/2 cup oil
- 1 (6-ounce) can tomato paste
- 1 (10-ounce) can tomatoes with chilies
- Pinch of sugar
- 1 cup water
- Salt, black pepper, and cayenne pepper to taste
How to cook Shrimp Sauce Piquante (Shrimp Creole):
- Saute onions, bell pepper, 1/2 of the green onion tops and 1/2 of the parsley in oil until onions are transparent.
- Add tomato paste, tomatoes with chilies, sugar and water and cook on low heat for 3 to 4 hours.
- Add shrimp, remaining green onion tops, parsley, salt and cayenne pepper; continue to cook about 20 minutes.
- Serve the Shrimp Sauce Piquante over cooked rice in soup bowls.
