
Sole Fillets Florentine Recipe
Ingredients:
- 6 sole or flounder fillets (about 6 ounces each)
- 1 cup Creamed Spinach (see the recipe below)
- Salt and pepper, to taste
- 2 ounces butter
- 1/2 cup minced mushrooms
- 1/2 cup freshly grated Parmesan cheese
- 1 cup Parsley-Cream Sauce (see the recipe below)
How to cook Sole Fillets Florentine:
- Preheat oven to 375°F (190°C).
- Prepare Creamed Spinach, spread it evenly on a flat well-buttered glass oven dish. Cover with sole or flounder fillets, and sprinkle with salt and pepper.
- Melt butter in a skillet and add minced mushrooms. Simmer until soft. Then pour the butter and mushrooms over the fish fillets.
- Stir 3 tablespoons of grated Parmesan cheese into Parsley-Cream Sauce and add plenty of salt and pepper. Pour sauce over the mushrooms and top the dish with the remaining Parmesan cheese.
- Bake at 375°F (190°C) for 1/2 hour.
Creamed Spinach Recipe
Creamed Spinach Ingredients:
- 3 pounds spinach
- 2 heaping tablespoons butter
- 1 1/2 tablespoons flour
- 1 cup milk
- Salt and pepper, to taste
- 2 tablespoons cream
How to cook Creamed Spinach:
- Cook spinach in a very little salted water. Drain thoroughly and place in a colander, pressing and rubbing until the spinach is mashed through. Strain off any remaining liquid.
- Melt butter and stir in flour, stirring until smooth. Gradually stir in milk, stirring constantly, until sauce thickens. Season with salt and pepper to taste.
- Fold the spinach puree into the cream sauce and cook together for a few minutes. At the last, add cream. Stir well and serve.
Parsley-Cream Sauce Recipe
Parsley-Cream Sauce Ingredients:
- 2 ounces butter
- 1/2 cup flour
- 1 cup cream
- 1 cup milk
- Salt and pepper, to taste
- 1/4 cup chopped flat-leaf Italian parsley
How to cook Parsley-Cream Sauce:
- Melt butter in a saucepan. Remove from heat and stir in flour, stirring to remove any lumps.
- Gradually add cream, a little at a time, stirring until smooth and creamy. Add milk and continue to stir until smooth again. Season with salt and pepper to taste.
- Fold in chopped parsley.
