
Sole Fillets in Parmesan Cheese Recipe
Ingredients:
- 6 sole or flounder fillets (about 4 ounces each)
- 3 1/2 cups grated Parmesan cheese, divided
- 2 beaten egg yolks
- Dash of cayenne pepper
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups milk
- 1 tablespoon heavy cream
- 1 teaspoon lemon juice
How to cook Sole Fillets in Parmesan Cheese:
- Preheat oven to 375°F (190°C).
- Mix 1/2 cup grated Parmesan cheese with beaten egg yolks. Add dash of cayenne pepper to sole or flounder fillets. Lay the fish fillets on a greased baking pan and cover with the egg mixture. Cover the dish with greased paper and bake in a 375°F (190°C) oven for about 20 minutes.
- Melt butter in the top of a double boiler and stir in flour until smooth. Gradually add milk, stirring constantly until mixture thickens. Add heavy cream and lemon juice.
- Remove paper from top of fillets and pour sauce over them, topping with 1 1/2 cups Parmesan cheese and return to the oven.
- Do not leave in the oven longer than 10 minutes or sauce will curdle.

Tips:
If you prefer a very dark somewhat soft “Au Gratin” top, set the dish under a preheated broiler instead of the oven. But be sure to leave the door open. Watch it!
