
Sri Lankan Red Prawn Curry Recipe
Ingredients:
- 1 1/2 pound fresh small prawns (shrimps)
- 1 medium onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 teaspoon finely grated fresh ginger
- Small stick cinnamon
- Pinch of fenugreek seeds
- Few curry leaves
- Small stem lemon grass, bruised, or 2 strips lemon rind
- 1 strip screw pine leaf or rampe leaf
- Pinch of ground turmeric
- 1 1/2 teaspoons chili powder
- 2 teaspoons paprika
- 1 teaspoon salt
- 2 cups coconut milk
- Fresh juice of 2 lemons
How to cook Sri Lankan Red Prawn Curry:
- Wash prawns and remove heads, but leave shells on, for better flavor.
- Put all ingredients, except lemon juice, into a saucepan and bring slowly to simmering point.
- Simmer uncovered for 20 minutes or until onions are soft. Add lemon juice and stir.
- Taste and add more salt or lemon if required.
- Serve the Sri Lankan Red Prawn Curry with steamed rice.
