
Steamed Mussels in Wine Sauce Recipe
Ingredients:
- 6 dozen mussels, scrubbed and debearded
- 1 onion, chopped
- 2 shallots, chopped
- 2 1/2 cups finely chopped fresh parsley
- Freshly ground black pepper
- 10 tablespoons butter (3 tablespoons cut into chunks)
- 1 1/2 cups dry white wine
- 3 tablespoons fresh lemon juice
How to cook Steamed Mussels in Wine Sauce:
- Put the mussels into a nonreactive pot with the onions, shallots, parsley, pepper, 7 tablespoons of the butter, and the wine. Cover and steam for a few minutes over high heat, shaking the pot several times. When all the mussels open, transfer them to a serving dish and keep them warm. Discard any mussels that do not open.
- Strain the cooking liquid into a small, nonreactive saucepan. Over high heat, reduce the liquid to 1/3 of its original volume. Off the heat, whisk in the butter chunks, and keep whisking until the sauce is thick and foamy. Whisk in the lemon juice and pour the sauce over the steamed mussels.
