
Stuffed Squid (Rellenong Pusit) Recipe
Serves/Makes: 4
Ingredients:
- 1 1/2 pounds squids (pusit), fresh or frozen
- 1/2 cup soy sauce
- 1 tablespoon apple cider vinegar
- Salt and freshly ground pepper to taste
- 2 tablespoons garlic, minced
- 3 tablespoons vegetable or corn oil
- 1/3 cup finely minced onion
- 1/3 cup minced tomatoes
- 1/4 pound ground pork
- 1 cup grated carrots
- 1 egg, beaten
- 1 cup sifted flour
How to cook Stuffed Squid (Rellenong Pusit):
- Pull out and discard cellophanelike backbone and jawlike bone on the mouth of the squid. Wash individually.
- Cook squid in mixture of soy sauce, vinegar, salt, pepper and 1 tablespoon garlic for 5 minutes. Set aside.
- Saute 1 tablespoon garlic, onion and tomatoes in 1 tablespoon of oil. Add pork seasoned with salt and pepper. Stir fry for 5 minutes.
- Add carrots, stir frying for 2 more minutes. Remove mixture from fire. Cool.
- Loosely stuff each squid with the pork mixture at the base of the head. Secure each opening with a toothpick.
- Dip each squid in the mixture of beaten egg, flour and salt. Fry stuffed squid in 2 tablespoons of oil for 5 minutes in a covered pan.
- Serve the stuffed squid with sweet and sour sauce.
