
Thai Crisp Fried Crab Claws Recipe
Ingredients:
- 8 large crab claws
- 1/4 cup rice flour
- 2 tablespoons cornstarch
- 1/2 teaspoon sugar or honey
- 1 stalk fresh lemongrass, finely chopped
- 4 cloves garlic, finely chopped
- 1 tablespoon finely chopped Chinese parsley
- 1 to 2 teaspoons seeded and finely chopped red chile peppers (optional)
- 1 teaspoon soy sauce
- 1 egg
- 1 to 2 teaspoons Thai fish sauce
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup cold water
- 5 cups vegetable oil for deep-frying
- Thai Spring Roll Sauce (If you can’t buy Thai spring roll sauce, you can make your own, see the recipe below)
- Lettuce leaves for garnish (optional)
How to cook Thai Crisp Fried Crab Claws:
- Rinse crab claws and pat dry.
- Combine rice flour, cornstarch, sugar, lemongrass, garlic, Chinese parsley, red chile peppers, soy sauce, egg, fish sauce, and black pepper; blend well.
- Stir in cold water and mix well.
- Preheat oil for deep-frying on medium heat.
- Coat crab claws with rice flour mixture.
- Deep-fry for 12 to 15 minutes, or until golden brown.
- Drain on absorbent paper towels.
- Serve the Thai Crisp Fried Crab Claws with Thai spring roll sauce.
- Garnish with lettuce leaves, if desire.
Thai Spring Roll Sauce Recipe
Thai Spring Roll Sauce Ingredients:
- 1/4 cup sugar
- 1/2 cup water
- 1/2 cup red wine vinegar
- 1 to 2 tablespoons Thai fish sauce
- 2 to 3 teaspoons ground red chile peppers
- 1/2 carrot or daikon, shredded
- 1/4 cup coarsely chopped peanuts or macadamia nuts
How to cook Thai Spring Roll Sauce:
- In a small saucepan combine sugar and water; bring to a boil.
- Reduce heat and simmer for about 10 minutes, or until sugar is dissolved.
- Remove from heat. Stir in red wine vinegar, fish sauce and red chile peppers.
- Pour sauce into serving bowl.
- Chill, then top with carrots and sprinkle with peanuts before serving.
