
Thai Crispy Fried Shrimp Recipe
Ingredients:
- 1 pound large shrimp
- 1 cup tapioca flour or cornstarch
- 2 ounces Thai rice noodles, cut into 2 to 3-inch strips
- 1/4 teaspoon salt
- 4 cups vegetable oil for deep-frying
- Thai Spring Roll Sauce (If you can’t buy Thai spring roll sauce, you can make your own, see the recipe below)
- Lettuce leaves
- Cucumber slices
- Red chile peppers, sliced
- Chinese parsley sprigs
How to cook Thai Crispy Fried Shrimp:
- Shell and devein shrimp, leaving the tails on for color.
- In a mixing bowl, combine tapioca flour, rice noodles, and salt; mix lightly.
- Roll each shrimp in the flour mixture to coat and set aside.
- Just before serving, heat oil in a wok on high heat.
- Place the shrimp 1 at a time in the oil and fry for about 2 minutes, or until the shrimp are cooked.
- Remove shrimp and place on absorbent paper towels.
- Serve the Thai Crispy Fried Shrimp hot with Thai spring roll sauce.
- Garnish with lettuce, cucumber slices, red chile peppers, and Chinese parsley sprigs.
Thai Spring Roll Sauce Recipe
Thai Spring Roll Sauce Ingredients:
- 1/4 cup sugar
- 1/2 cup water
- 1/2 cup red wine vinegar
- 1 to 2 tablespoons Thai fish sauce
- 2 to 3 teaspoons ground red chile peppers
- 1/2 carrot or daikon, shredded
- 1/4 cup coarsely chopped peanuts or macadamia nuts
How to cook Thai Spring Roll Sauce:
- In a small saucepan combine sugar and water; bring to a boil.
- Reduce heat and simmer for about 10 minutes, or until sugar is dissolved.
- Remove from heat. Stir in red wine vinegar, fish sauce and red chile peppers.
- Pour sauce into serving bowl.
- Chill, then top with carrots and sprinkle with peanuts before serving.
