
Thai Fish Cakes Recipe
Serves/Makes: 4
Ingredients:
- 1 pound cod fillets
- 4 kaffir lime leaves, finely shredded
- 1 tablespoon fresh Thai basil, chopped
- 2 tablespoons red curry paste
- 3 ounces green beans, very finely chopped
- Oil for frying
How to cook:
- Place cod fillets in the food processor and process for 20 seconds or till smooth.
- Add lime leaves, Thai basil and curry paste and process for 10 seconds.
- Transfer fish mixture to a large bowl, adding green beans and spring onion, mix well.
- Using wet hands, form 2 rounded tablespoons of the mixture at a time into flattish patties.
- Heat oil in pan over medium heat.
- Fry 4 fish cakes at a time till they are golden brown on both sides.
- Drain on paper towers and serve immediately with Dipping Sauce (see below).
Dipping Sauce Ingredients:
- 1 cucumber (finely chopped)
- 3 tablespoons sweet chili sauce
- 2 tablespoons rice vinegar
- 1 tablespoon unsalted roasted peanuts, chopped
- 1 tablespoon fresh coriander, chopped
