
Thai Fish with Ginger and Yellow Bean Sauce Recipe
Ingredients:
- 1 whole any firm, white-fleshed fish (about 2 pounds)
- 1 ounce dried Chinese black mushrooms
- 6 cups vegetable oil for deep-frying
- 2 cloves garlic, chopped
- 1/2 cup thinly sliced shallots
- 2 tablespoons shredded common ginger
- 2 tablespoons brown sugar
- 1 to 5 red chile peppers, seeded and chopped (optional)
- 1 tablespoon Thai yellow bean sauce*
- 1 tablespoon oyster sauce
- 3 green onions, cut into 2-inch lengths
- 1 tablespoon cornstarch
- 1/2 cup cold water
- 3 tablespoon rice flour
- 3 cups chopped cabbage
- Red chile peppers to garnish
- Chinese parsley sprigs, cut into 2-inch lengths to garnish
How to cook Thai Fish with Ginger and Yellow Bean Sauce:
- Rinse fish well under running cold water. Score fish on both sides on the diagonal in a crosshatch pattern every 3/4 inch, cutting halfway to the bone.
- Soak Chinese black mushrooms in warm water for 15 minutes; drain and discard stems. Cut caps into strips. In a saucepan heat 3 tablespoons of the oil. Add mushrooms, garlic and shallots and cook on medium heat, until golden brown. Add ginger, brown sugar, red chile peppers, yellow bean sauce, oyster sauce and green onions; mix well.
- Dissolve cornstarch in cold water and add to sauce; stir well. Reduce heat and simmer until sauce is thick.
- Pat fish dry with absorbent paper towels. In a large wok heat remaining oil for deep-frying on high heat for about 4 minutes. Coat fish with rice flour. Carefully place fish in oil, then immediately lower heat to medium.
- Fry fish until golden brown, about 10 to 15 minutes, depending on the thickness of the fish. Drain fish on absorbent paper towels to remove excess oil.
- Place chopped cabbage on a large platter and top with fish and pour on sauce.
- Garnish with red chile peppers and Chinese parsley.
