
Thai Fried Dorab Recipe
Serves/Makes: 4
Ingredients:
- 1 dorab (wolf-herring), large enough to serve 4
- 2 teaspoons salt
- 1 cup cooking oil for frying
How to cook:
- Wash and clean the fish, and then cut it into four pieces.
- Rub the fish with the salt, allow resting for a short time, and then wash in fresh water.
- Pour the oil into a wok on high heat. When the oil is very hot, fry the fish so that it is crisp on the outside and tender inside.
- Serve as is or with light soy sauce or chili fish sauce (see below) some other sauce you like.

- 2 tablespoon fish sauce
- 2 teaspoon lime juice
- 1 teaspoon chilies
