
Thai Fried Fish in Tamarind Sauce Recipe
Serves/Makes: 4
Ingredients:
- 4 small red snappers, cleaned
- 2 ounces tamarind pulp
- 2 cups water
- 2 tablespoons olive oil
- 1 2-inch piece ginger, chopped
- 2 cloves garlic, chopped
- 2 teaspoons brown sugar
- 1/2 teaspoon cayenne
- 1 teaspoon salt
- 4 scallions, thinly sliced
- Vegetable oil for frying
- 2 tablespoons sliced gherkins to garnish
- 2 tablespoons chopped basil or mint to garnish
- 2 tablespoons white malt vinegar
- 2 cloves garlic, crushed
- 1 teaspoon salt
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
How to cook Thai Fried Fish in Tamarind Sauce:
- To make the marinade, mix together the vinegar, garlic, salt, coriander, and turmeric. Rub all over the fish and marinate for 1 hour in the refrigerator.
- Meanwhile, make the sauce. Dissolve the tamarind pulp in the water, then rub it through a sieve. Boil the liquid in a small saucepan until the quantity is reduced by half. In a frying pan or wok, heat the oil, and saute the ginger and garlic for a few seconds. Add the sugar, cayenne, salt, and scallions, and stir. Stir in the thick tamarind water and adjust the seasoning.
- Fry the fish in hot oil for about 5 minutes each side, turning them over once. Put the fish on a serving dish, heat the sauce quickly, and pour it over the fish. Garnish with gherkins and basil or mint.
