
Thai Fried Noodles with Seafood Recipe
Ingredients:
- 1/2 pound egg noodles
- 2 tablespoons vegetable oil
- 5 shallots, minced
- 1/2 teaspoon ground ginger
- 1 teaspoon ground coriander
- 2 carrots, sliced
- 2 cabbage leaves, coarsely shredded
- 2 tablespoons light soy sauce
- 2 tomatoes, peeled, seeded, and chopped
- 4 scallions, minced
- Salt and pepper to taste
- 1/2 pound scallops
- 1/2 pound small squid
- 1/2 pound prawns (shrimp), peeled
- 1/2 pound any firm, white-fleshed fish
- 8 tablespoons vegetable oil
- 2 shallots, finely sliced
- 2 cloves garlic, chopped
- 2 tablespoons yellow tauco (yellow bean sauce)
- 1 pinch cayenne
How to cook Thai Fried Noodles with Seafood:
- Cook the noodles in boiling salted water for 4-5 minutes, or according to the instructions on the package. Drain and rinse under cold running water for a few seconds. Loosen and shake out the strands a little, then let cook and dry.
- In a wok or frying pan heat the oil and fry the shallots for 1 minute, then add the ginger and coriander. Stir for a few seconds, add the carrots and cabbage, and continue stirring for about 4 minutes. Add the soy sauce and the noodles, and stir for 3 minutes. Add the tomatoes, scallions, and salt and pepper. Turn and stir for another minute.
- Clean and prepare the scallops, squid, prawns, and fish. Fry each separately in the oil in a wok or frying pan for 2-3 minutes. Discard all but 2 tablespoons of the oil. Fry the shallots and garlic in it, stirring continuously, for 2 minutes. Stir in the yellow bean sauce and cayenne. Add the seafood, and stir-fry all together for not more than 2 minutes.
- Arrange on top of the fried noodles and serve immediately.
