
Thai Grilled Caramelized Fish Recipe
Ingredients:
- 4 sole
- 1 teaspoon salt
- Juice of 1 lime
- 4-6 tablespoons turbinado sugar*
- Thai Sweet and Sour Chile Sauce (see the recipe below), to serve
How to cook Thai Grilled Caramelized Fish:
- Rub the fish with salt and lime juice and leave in a cool place until they are to be grilled.
- Just before grilling, rub the fish all over with the sugar and grill for 3 minutes each side, turning over once.
- Serve immediately, with a chile dip (Thai Sweet and Sour Chile Sauce) if you like it hot.
Thai Sweet and Sour Chile Sauce (Nam Chim) Recipe
Thai Sweet and Sour Chile Sauce (Nam Chim) Ingredients:
- 1 pound red chiles, seeded and chopped
- 2 cloves garlic, chopped
- 2 tablespoons water
- 2 tablespoons peanut oil or olive oil
- 4 tablespoons grated palm sugar or granulated sugar
- 6 tablespoons white malt vinegar
- 2 teaspoons salt
- 1 cup water
How to cook Thai Sweet and Sour Chile Sauce (Nam Chim):
- Put the chiles, garlic, water, and oil in a blender and blend until smooth.
- Put the remaining ingredients in a saucepan and add the chile paste.
- Bring to a boil and simmer for 30-40 minutes until reduced by half.
- Let cool before storing in a jar or bottle.
- This will keep fresh in the refrigerator for at least 2 weeks.
