
Thai Lobster with Pineapple Recipe
Ingredients:
- 4 lobster tails (6 ounces each)
- 1/4 cup vegetable oil
- 3 cloves garlic, chopped
- 1 stalk fresh lemongrass, finely chopped
- 1 teaspoon Red Curry Paste (store bought or homemade, see the recipe below)
- 1 egg, lightly beaten 1/2 cup water
- 1 cup pineapple chunks
- 2 to 4 tablespoons Thai fish sauce
- 1/2 teaspoon brown sugar
- 15 to 20 sweet basil leaves
How to cook Thai Lobster with Pineapple:
- Slit underside of lobster and press lightly to open. In a skillet heat oil on high heat; add garlic, lemongrass and red curry paste and cook until sauce bubbles.
- Stir in egg and cook for 1 minute.
- Add lobster and water and bring to a boil.
- Reduce heat to medium and add pineapple, fish sauce and brown sugar.
- Cook for 5 to 10 minutes, or until lobster is cooked, but not over-cooked.
- Stir in sweet basil and serve the Thai Lobster with Pineapple immediately.
Red Curry Paste Recipe
Red Curry Paste Ingredients:
- 15 to 20 red chile peppers, seeded
- 2 stalks fresh lemongrass, coarsely chopped
- 5 shallots, thinly sliced
- 1 clove garlic
- 1 tablespoons coarsely chopped kha (galingal)
- 3 kaffir lime leaves, chopped
- 1/4 cup Chinese parsley roots
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground caraway seeds
- 1/2 to 1 tablespoons Thai fish sauce, or 1 teaspoon salt
- 1/4 teaspoon shrimp paste (optional)
- 2 tablespoons vegetable oil
How to cook Red Curry Paste:
- Combine all the ingredients in a food processor and process until smooth.
- If a mortar and pestle is used, then add oil after all other ingredients are ground.
- Refrigerate in a glass container.
- The Red Curry Paste keeps well for several months.
Note:

Tip:
It is cheaper to buy lobster tails than whole lobsters, as there is not too much meat to eat in a whole lobster once everything else has been discarded.
