
Thai Prawn and Pork Toasts Recipe
Ingredients:
- 1 tablespoon Chinese dried prawns
- 4 ounces prawns or large shrimp, cooked, peeled, and deveined
- 1 pound lean ground pork
- 1 tablespoon chopped fresh coriander or cilantro
- 2 cloves garlic
- 1 egg
- 1 tablespoon Thai fish sauce
- 6 slices dry-old bread
- Oil for deep-fat frying
How to cook Thai Prawn and Pork Toasts:
- In a food processor combine dried prawns, coriander or cilantro, and garlic. Cover and process till finely chopped. Add fresh prawns and pork. Cover and process till smooth. Add egg and fish sauce. Cover; process till well combined.
- Spread mixture evenly over bread. Cut crusts from bread and cut each slice into four triangles.
- Fry four or five triangles at a time in deep hot fat (375°F / 190°C) till golden, turning to brown evenly. When adding triangles to hot fat, carefully slide each triangle into the oil, filling side down.
- Remove with a small wire strainer or slotted spoon. Drain on paper towels.
- Arrange toasts on shredded lettuce and serve with sweet and sour sauce.
- Serve the Thai Prawn and Pork Toasts warm.
