
Thai Seafood Potpourri as You Like It Recipe
Serves/Makes: 4 – 6
Ingredients:
- 1/2 pound each of squid (calamari), sea perch meat, prawns (shrimp), and scallops
- 1 blue swimming crab
- 1 cup mung bean noodles, soaked, cut shorted
- 1 lettuce plant
- 3 coriander roots pounded well
- 2 tablespoon light soy sauce
- 3 cups chicken stock
For sauce: - 1 tablespoon fermented soybeans
- 1 teaspoon minced coriander root
- 1 tablespoon minced garlic
- 1 teaspoon ground hot chilies
- 3 tablespoon lime juice
- 5 tablespoon fish sauce
- 1/2 teaspoon light soy sauce
- 1 teaspoon sugar
How to cook:
- Mix all the sauce ingredients together and place in small bowls.
- Wash the squid, cut into pieces, and score each piece. Cut the sea perch fillets, shell the prawns. Wash the crab and cut into pieces.
- Arrange the seafood, noodles, and lettuce attractively on a platter.
- Put the chicken stock into a pot, heat to boiling add the coriander root, and season with soy sauce to taste.
- At mealtime, place the pot of broth on a heater on the table, together with seafood platter and the bowls of sauce.
- Put some vegetable, meat as you like, and noodles into the broth, eat with sauce.
