
Thai Shrimp Soup Recipe
Ingredients:
- 12 ounces medium shrimp
- 1 tablespoon vegetable oil
- Salt
- 2 Thai green chiles, seeded and slivered
- Grated zest of 2 limes
- 4 cups chicken stock
- Juice of 2 limes
- 2 teaspoons Thai fish sauce
- 1/2 bunch chopped cilantro
- 3 sliced scallions
- 1 red Thai chile, seeded and diced for garnish
How to cook Thai Shrimp Soup:
- Peel and devein shrimp, reserving shells.
- In heavy pot, heat oil over high heat. Saute shells with salt until pink, about a minute. Add Thai green chiles and lime zest and saute less than a minute.
- Pour in chicken stock, bring to boil, and simmer 20 minutes. Strain, discarding solids, and pour broth back into pot. Bring to low boil.
- Add shrimp, lime juice, and Thai fish sauce and simmer until shrimp are done, about 2 minutes. Sprinkle in cilantro, scallions, and red shiles and serve hot.
