
Thai Steamed Fish Eggs with Dill Recipe
Ingredients:
- 2 cups fish eggs
- 2 ounces any firm, white-fleshed fish fillet
- 1/8 teaspoon salt
- 3 dried red chile peppers
- 6 shallots, chopped
- 4 cloves garlic, finely chopped
- 1 ounce fresh dill, cut into 2-inch strips
- 5 eryngium foetidum (culantro) leaves, finely chopped
- 2 to 4 tablespoons Thai fish sauce
- 1 teaspoon cornstarch
- 2 eggs
- Fresh dill to garnish
How to cook Thai Steamed Fish Eggs with Dill:
- Rinse fish eggs in cold water, then set aside.
- Mince fish fillet; add salt and mix well.
- Remove seeds from dried red chile peppers, then soak in warm water for 5 minutes; drain and finely chop.
- Combine fish eggs, fish, red chile peppers, shallots, garlic, dill, eryngium foetidum leaves, fish sauce, cornstarch and eggs; blend well.
- Pour mixture into a 2-inch-deep pan and steam for 40 minutes.
- Serve warm. Garnish with fresh dill.
