
Thai Sweet and Sour Snapper Recipe
Serves/Makes: 4 – 6
Ingredients:
- 1 whole red snapper, about 2 pounds
- 4 tablespoons cornstarch
- 1 pound mixed vegetables
- 4 cups vegetable oil for deep-frying
- 3 cloves garlic, finely chopped
- 1/4 cup tomato sauce
- 2 tablespoons red wine vinegar
- 1 to 2 tablespoons fish sauce
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 4 to 6 red chile peppers, seeded and sliced (optional)
- 1/2 cup water
- Chinese parsley sprigs to garnish
How to cook Thai Sweet and Sour Snapper:
- Rinse fish well under running cold water. Score fish on both sides on the diagonal in a crosshatch pattern every 3/4 inch, cutting halfway to the bone. Coat fish lightly with 2 tablespoons of the cornstarch.
- Cut vegetables into 1 to 2-inch strips. Heat oil in a large wok on high heat until oil begins to get hot.
- Lower whole fish into the wok and reduce heat to medium. Cook for about 20 to 25 minutes, or until fish is cooked and crisp, being careful not to overcook. Set aside on a large platter.
- Heat 2 tablespoons of the oil and the garlic in a frying pan on medium heat until the garlic is golden brown. Stir in mixed vegetables, tomato sauce, red wine vinegar, fish sauce, sugar, salt and red chile peppers.
- Combine the remaining 2 tablespoons cornstarch and water; blend to make a smooth paste. Stir cornstarch mixture into sauce and cook 5 minutes, or until vegetables are cooked and sauce is thickened.
- Pour over the fried fish and serve hot.
- Garnish with Chinese parsley sprigs.
